Strawberry Cake
It seems this year that strawberries are in abundance. Sweet, large(ish), cheap… so what does one do with that but make strawberry cake.
This recipe I saw and saved on my instagram. You have to see how many recipes I have saved there, it’s like a cookbook and some, I have the best intentions and say “yeah, I will do this or that” and I never get around. I always go to the ones I already know.
Things that I like about a recipe that make me do it is:
Not a lot of ingredients - you name 20 ingredients and you have lost me!
Ingredients that we have readily available, either in the fridge/pantry or easy to get hold of
Not many utensils and appliances - hate when you have to unbox a million items to make a recipe
Freshness and simplicity in taste - if they sound heavy I know I will struggle and will need the peppermint tablets
So imagine when I read that there was no butter mixing and no stand mixer, you just needed a wooden spoon or just a whisk… I had to make this.
Smells and tastes amazing, not too sweet just perfect!

Strawberry Cake
Serves 10-12
Ingredients
500g strawberries tops removed
1cup caster sugar
1/2cup canola or vegetable oil
2 eggs
250g plain yoghurt
1ts vanilla extract
335g plain flour
4ts baking powder
pinch of salt
Icing sugar for dusting
Directions
Pre-heat oven to 180° fan forced (if not 200°)
Chop half the strawberries in quarters and the other half in half
Whisk sugar, oil, eggs, yoghurt and vanilla until all combined
Add sifted flour, baking powder and salt and whisk until batter is all smooth
Butter and line a 23cm cake dish with baking paper and pour half the batter
Scatter the strawberries that are cut in quarter
Top with the remaining batter, smooth it out and arrange the halved strawberries cut face down
Bake for 50 minutes or until skewer comes out clean
Cool, sift some icing sugar and serve!
HINT 1: You can eat it hot like a pudding with vanilla ice cream or cold like a cake with extra strawberries and cream
HINT 2: Add extra sugar if you have a sweet tooth, I like desserts a little tart
