Easy Chocolate Mousse
I first learned how to make chocolate mousse in high school, in my home economics class. I have to say for a cringe-worthy class, (it was abit of an old-fashioned class where you learnt how to cook and you also learned how to put a condom on a carrot by a very strange teacher) we did learn a lot, and some of those recipes, I still do in my day-to-day.
The chocolate mousse we did was a slight variation to this recipe. Easy, quick just the way I like recipes. Also decorating it, is simple. A few raspberries, a mint leaf, maybe some whipped cream and that is all!
I will tell you a little secret about me… I am not a big chocolate fan (insert scared face emoji!) I know, I know I am one of those rare people that chocolate doesn’t do it for me. In saying that, I love this mousse. I guess it’s because it’s not very sweet and the dark chocolate has a certain bitterness.
Also, although the recipe say butter, I deliberately don’t say what butter. You can use either, I tend to use salted butter as I like the slight salt playing with the sweetness.

Recipe
Chocolate Mousse
Serves 6-8
Ingredients
20g butter (room temperature)
200g dark chocolate
300g thickening cream
3 eggs separated
1tbs sugar
raspberries for decorating
Directions
Melt butter and chocolate in a small saucepan over very low heat
Beat cream and sugar until soft peaks form
Beat egg whites until soft peaks form
Mix in yolk into the chocolate mixture very slowly but mixing it very swiftly
Mix in cream gently with chocolate mixture
Fold in egg white
Pour into glasses or bowls
Refrigerate for at least an hour to set
Decorate with raspberries
HINT 1: You can use milk or white chocolate instead of dark chocolate
